Smoky Tomato Soup with Kale, White Beans, and Green Chilis

Cozy up to a bowl of grown-up tomato soup!

Bring on the soup! It’s body warming sensation makes it synonomous with this time of year; it’s feel-good powers has us turning to the cozy goodness for what ails us.

It’s time to put on our big kid pants for this grown-up, classed up tomato soup that takes less than 30 minutes to make. What we love about this soup is we can make it on a Sunday for lunches during the week, or we can quickly throw it together on a busy week night for dinner. Besides the lovely flavor, the kale and beans give the soup a hefty nutritional boost. It’s vegan, and can be made gluten free (unless your dipping a hunk of crust bread in there).

As with most of our recipes, swaps and substitutes are easy changes. Another bean would be wonderful; if you can’t find tuscan kale, substitute with other types, and a red or yellow onion will be fine if that is what you have in the pantry.

  1. On a cutting board, sprinkle minced garlic with ½ teaspoon kosher salt. Holding the blunt side of a chef’s knife with both hands, angle the knife and drag it across the garlic and salt mix until a paste forms. Re-pile the garlic, add sprinkles of salt, and drag the blade across the garlic as needed.
  2. In a large heavy bottom pot, heat olive (or avocado) oil over medium temperature. Add onions and cook for 6 minutes. To the pot, add garlic paste and a couple turns of fresh ground pepper, and cook for 2 minutes. Add tomato paste, and stirring occasionally, cook for an additional 3-4 minutes.
  3. Reduce heat to low; add remaining ingredients, and cook for 10-12 minutes.
  4. Season to taste with salt and pepper, and top with chopped raw almonds.
Recipe Notes

*Lentils may also be used. Take care to adjust for cooking time.
*If gluten free, check labels where necessary.
*Spice levels may be adjusted more or less depending on preference.
