Green Beans with Tomatoes and Tzatziki
Freshly ground black pepper
We used Kite Hill plain yogurt (vegan)
Tablespoon freshly squeezed
Garlic Dill mustard
We used Mustard and Co.
Season to taste
In a small bowl, combine all ingredients. Set aside.
In a small non-stick pan, heat olive oil over high heat. Add tomatoes, and char until they easily pull away from surface. Set aside.
Heat olive oil in a cast iron pan over med-high to high temperature. Shaking (or stirring) ocasionally, char beans for approximately 3-4 minutes.
Transfer beans and tomatoes to a serving dish. Drizzle with Tzatziki, and garnish with chives (optional)
*Tomatoes were charred in a section of the same pan, while the green beans were charring.
