Braised Carrots with Juniper Berries and Thyme

We have been eating so many carrots here lately! In soups, roasted, and sautéed; we’ve been going double down on the beta-carotene the past couple months. This recipe was a real game changer for us!

Juniper berries are a fantastic addition to carrots; they add a hint of pine, play a nice balancing act with the sweetness of the cooked carrot, and contribute an earthy character. We love everything about this dish! The ingredients give the most lovely fragrance, and they are almost too beautifl to eat. Almost.

Instructions
  1. Preheat oven to 375°.
  2. In a large pan over medium low temperature, heat olive oil.
  3. Add onions and carrots (we first charred our carrots in a very hot cast iron pan for a few seconds), and season with salt and pepper. Ocasionally shaking pan or stirring, cook for 8 minutes.
  4. Add juniper, apple cider vinegar, and thyme. Covered, place in pre-heated oven. Begin checking for doneness at the 20 minute mark, and cook until tender; approximately 25-30 minutes.
  5. Remove from oven, check for seasoning, and garnish with (optional) carrot tops.
Recipe Notes

*Depending on size of carrots, cooking times may vary. If needed, remove from braising liquid, and add back to braising liquid in the end with larger carrots to warm through.
