It’s cold outside. Warm up with a wonderful bourbon cocktail.
We have been on a charred cocktail kick lately. Rustic, right? It somehow makes us feel cozy, it only takes a minute, and it adds a fabulous flavor to simple syrup.
We love carrots, but what about those carrot tops? We could have made pesto, or thrown them in the homemade stock pot. But we had bourbon, so simple syrup! Juniper and ginger are two of our absolute favorite ingredients to pair with carrots; so, why not make a cocktail.
Bourbon with Charred Carrot Tops, Juniper, and Ginger Beer
Carrot Top- Juniper Simple Syrup
Carrot Top-Juniper Simple Syrup
Either on a grill set to high heat, over open flame, or in a pan; char carrot tops. Set aside.
In a small saucepan, combine water, sugar, carrot tops, and juniper berries. Over medium temperature and stirring continuously; heat until all sugar is dissolved, approx 3-4 minutes.
Using a fine mesh sieve, strain simple syrup into a clean glass jar, and set aside to cool.
In a lowball or rocks glass filled with ice, combine bourbon and simple syrup. Top with ginger beer, and stir to combine and chill.
*We used the grill method for the carrot tops.
*To speed up the cooling process for the simple syrup, we transfered a small portion to a bowl, and placed in fridge until cool.
*A chilled glass was used.
*Refrigerated in an airtight container, simple syrup will keep for up to 3 weeks.
