If you’ve found yourself here, then you’re wanting to get down on a hearty pot of BBQ Baked Beans. We think these will do a mighty fine job at satisfying your craving!

Growing up as a kid, I can’t tell you how many times my family made baked beans. I can’t remember the exact recipe; I’m almost certain it included mustard, green pepper, and brown sugar. We wanted to lighten them up, yet maintain the same great flavor we were used to in BBQ baked beans.

We used Smoky BBQ Mustard from our beloved Mustard and Co.. The tang of the mustard is balanced with molasses, and it’s got a lovely smoky flavor. Alternatively, you can mix equal parts of your favorite sweet bbq sauce with stone ground mustard (check labels for vegan and gf).

Instructions
  1. Preheat oven to 250°.
  2. In a small to medium pan, heat oil over medium temperature. Add onions and peppers, and cook for 6 minutes, or until soft.
  3. Remove pan from heat. To the pan add beans, salt, pepper, cumin, lime juice, and bbq mustard. Stir to combine.
  4. Pour beans into baking dish, and add water to barely cover beans.
  5. Stirring and checking the water level occasionally, bake for approximately 90 minutes.
  6. Check for seasoning. If desired, top with chopped scallion.
Recipe Notes

*While baking, add water as needed to keep beans barely covered.
