Happy Thursday! As I’m writing this, today is Halloween. We will be staying in, feasting on leftovers, listening to podcasts, and we may let our brains turn to mush via Netflix. After another busy weekend, there was a 0 in 0 chance of us venturing out tonight. Alas, the night wasn’t void of chocolate; we made these treats and they were perfect.
Dessert Ravioli! Filled with roasted pumpkin & carnival squash, persimmon, fresh ginger, and a dash of ancho powder. Finished with a chocolate drizzle, pumpkin seeds, and a sprinkle of salt.

Rancher’s Pasta (aka Huevos Rancheros Pasta)

How are you doing on this Happy Humpday?? Got any plans for the weekend? We had an adventurous weekend last weekend, so we are looking at mucho chill and relaxation time; filled with yummy food. Luckily, we got a lot of sleep Tuesday night, and were feeling much more alive on Wednesday. We were definitely riding the struggle bus on Tuesday. Speaking of sleep, how much do you get? “They” say we should be getting 6-8 hours a night. We usually get 6-6.5 hours a night; and wake up feeling fairly refreshed. The 8 hours Tuesday night didn’t seem to change our moods or alertness, but I’m sure our bodies and minds were happier for the extra 2 hours. Leave us a comment below on how much sleep you get on average, and if you feel like it has an impact on your daily routine. On a side note, we ordered the Brain Tonic Tea from Chattanooga, TN based Wooden Spoon Herbs. A blend of estate grown green tea, rosemary, and gingko promises mental clarity and improved memory. We will let you know what we think in an upcoming post.

Are you having a good week so far? We are! If you’re reading this, then you are alive, and that means you have every opportunity to have a good week. After a hectic schedule last week, and a fun filled weekend, we decided to take a couple days of down time to recharge. No fuss meals, revamped leftovers for lunch, and a lot of porch chilling pretty much ruled Monday and Tuesday.

Gazpacho with Tomatoes, Beet Leaves, and Basil + Popsicles

The heat. The humidity. Driving us off the front porch at 7:15 p.m. as the sun peeks over the cabin roof, the high temperatures here in East Tennessee seem perpetual. Like marionettes, the sun beckons us to ditch standing over a stove as much as possible. Knowing the glory of fall and winter will have us warming up the kitchen with pots of chili, we easily give in to the ebb of the oven.

Rustic Pizza Sauce

Italy? Greece? Egypt? Just who invented Pizza?! That answer varies depending on who you ask. Pizza is a flatbread after all, and all of the possible birthplaces certainly deserve homage for their respective flatbread creations. Regardless of who topped their flatbread first, the pizza we know today originated in Naples, Italy as an inexpensive flatbread to feed the poor.
